Back in the USA!

I have been back in the United States for a couple of weeks now and it is good to be back! My time in Scotland was a spectacular adventure and I am so glad I was given the opportunity to go! However it is not the only adventure that I will have in my life!  So here is to the friendships, the culture, and the challenges I overcame while abroad.  I loved my time in Scotland and cannot wait to go back!

Haggis, Neeps, and Tatties

Tonight we had a traditional Scottish meal for dinner at the Palace, well it occurred to me that I have never posted about any of the Scottish foods.  I can honestly say that I miss American food, not the crappy fast food, but simple tastefully done dishes.  However to explain what the food is like here.  Well first the seafood is delicious, the other stuff, eh it's alright.  So tonight I had a traditional Scottish delicacy or not so delicate.  It's called Haggis.  Well Haggis is the innerds of lamb, cooked in the sheep's stomach.  It tastes best with Neeps (mashed turnips) and Tatties (Mashed Potatoes).  It is actually good, if prepared correctly.  Another dish is Scottish Pie, which is a meat pie...enough said.  Another dish is called Shepard's Pie is a mix of meat and vegetables topped with mashed potatoes then baked.  These are just a few of interesting and unique Scottish dishes.

Coming to an End

As my time in Scotland comes to an end I continue to make the most of the few days that I have left here. I spent the weekend going around Edinburgh on my own and enjoying my favorite places.  I spent time in  Princes Park, walked down the Royal Mile, visited St. Andrews Square, sat at my favorite coffee and tea shops. I had an authentic Scottish Tea Party which was lovely.  I visited the National Portrait Gallery with my host family.  And just enjoyed the peace of solidarity while listening to the sounds of Edinburgh in the park.  I have my last final tomorrow in Environmental Biology.  Then on Tuesday and Wednesday I am going to spend my last few days in Edinburgh, Thursday is all house cleaning day, and then Friday I board my plane, and fly home.  It as been an amazing experience and has helped me to grow so much.  I cannot wait until I get to come back to Scotland once again.
